Like everyone else, now that fall in sort of in the air my thoughts go to pumpkin. I love pumpkin everything but especially desserts like these White Bean Pumpkin Blondies. The trick is to make a healthier version of the normal pumpkin recipes.
This recipe does not contain any gluten, dairy, soy, or refined sugar (if you leave out the chocolate chips). I prefer to add the chips since they are dark chocolate ones and have less sugar. (The picture show a batch that I make with cinnamon chips.)
It is loaded with protein, healthy fats, vegetables but don’t tell anyone. They will never know if you don’t open your mouth and tell them. For the CFS suffer these ingredients are what is recommended to include in their diet. It is recommended that they eliminate processed, refined carbohydrates, such as, refined sugar and white flour. These blondies have neither. It is also recommended that the CFS sufferer increase their protein, water and salt intake. More on that in a later post.
