
Vinegar and Salt Zucchini Chips
A healthy substitution for those addicting store bought potato chips. These are not loaded with preservatives and they are not fried in a bunch of unhealthy oil. They ARE loaded with healthy fiber. Finally, by using a dehydrator you don’t even have to heat up the oven.
Don’t have a dehydrator, no problem you can also make these in your oven at a low temperature. I set my dehydrator at 135 degrees F so set your oven accordingly.
I like to use a combination of olive oil and avocado oil, but you can use either one by itself. You can adjust the amount of vinegar and salt to your liking. And add various spices to change things up, keeping your taste buds happy.
Such as, Chili-Lime, taco seasoning, Italian Seasoning are only a few of the possibilities. Just sprinkle them on the zucchini slices before dehydrating.

- 1 tablespoon avocado oil
- 1 tablespoon olive oil , or all 1 oil
- 2 tablespoon Braggs Apple Cider Vinegar
- 1/2 teaspoon sea salt
- 4 cups zucchini , cut in 1/8" thick rounds
- In a large bowl combine the oils, vinegar and salt.
- Add zucchini rounds and gently mix with fingers to coats
- Place on dehydrator trays and sprinkle with addition sea salt to taste.
- Dehydrator at 135 degrees F for 8 to 12 hours. Time varies depending on the thickness of rounds and the day's humidity.
- Change things up with different spices, such as, Chili-Lime, taco seasoning, Italian Seasoning are only a few of the possibilities. Just sprinkle them on before dehydrating.
Don't have a dehydrator, don't worry. These can be done in the oven at the lowest setting.
