This squash was grown in my home garden without any pesticides so I did not peel it before cooking. Save the seeds and roast them for a healthy snack where you control the salt, oil and spices.

Butternut Squash – Rich in dietary fiber, high in Vitamin A and anti-oxidants. It is rich in B-complex group of vitamins like folates, riboflavin, niacin, vitamin B-6 (pyridoxine), thiamin, and pantothenic acid. Also contains adequate levels of minerals like iron, zinc, copper, calcium, potassium, and phosphorus.
