Mini Breakfast Frittatas make a wonderful individual grab-n-go breakfast. Double the recipe and make these on Sunday morning for breakfast and save the rest for a quick on the run breakfast during the week.

You can change up the ham, broccoli and cheese for anything you have left over in the fridge or your personal preferences. They will keep in the refrigerator of up to 5 days, if they last that long.
Eggs – rich in protein and contains all 9 essential amino acids and 3 non-essential acids, omega-3, choline, folate, selenium, Vitamin A, D and B12, and low in fat. Good for eyesight, a healthy immune system, energy, a healthy brain, strong muscles and healthy skin.
Broccoli – Considered a super food it is rich in iron, protein, calcium, chromium, carbohydrates, vitamin A and vitamin C. Contains anti-cancer and anti-aging properties. Improves the immune system and strengthens bones, lowers cholesterol and blood pressure levels.
Onions – the phytochemicals and Vitamin support your immune system, contains chromium to help stabilize blood sugar, and they are a scavenger of free radicals. Contains Vitamin B-6 and manganese and small amounts of calcium, iron, folate, magnesium, phosphorus and potassium.
Ham – Although it has a good amount of protein and does supply some vitamins and minerals it is not one of the healthiest meats to be eating. It is high in both sodium and fats. If you decide to eat ham, choose leaner versions. There is not much ham in these so I say “go ahead and enjoy”.
Green Chilies – High in Vitamins A and C, and fiber. They are an anti-oxidant, anti-bacterial and anti-depressant. The Capsaicin found in peppers acts as a natural anti-inflammatory and pain killer.
Greek Feta Cheese – Contains protein, calcium, phosphorus, Vitamin B-6 and B-12, riboflavin, selenium and zinc.
Monterey Jack Cheese – Contains calcium, protein, phosphorus, zinc and vitamin A. It is a low sodium cheese. Suitable for lactose intolerance. Pairs well with fruit and vegetables.
