
Italian Marinated Chicken
Looking for a new chicken recipe? This recipe for quick cooking Italian Marinated Chicken is so simple but full of wonderful flavor. You can marinate the chicken any where from one hour to overnight.
Have left-over chicken? This chicken makes great Chicken Tacos. Just cut up, place in a skillet, add some taco seasoning and warm up. Serve in tortillas with choice of toppings.
Left-over idea #2 – Slice chicken into strips and add to your green salad for a nutritious lunch.
- 1/8 cup olive oil
- 1/8 cup red wine vinegar
- 1 tablespoon dried italian seasoning , homemade or store bought
- 1 teaspoon sea salt
- 1/2 teaspoon Mesquite Seasoning
- 1/2 teaspoon freshly ground black pepper
- 3 chicken breast , boneless skinless
- 1 tablespoon olive oil
- 1 tablespoon avocado oil , or use all olive oil
- Slice chicken breast in half horizontally making two thinner pieces.
- Mix all ingredients for the marinade in a one gallon re-sealable bag. Add chicken breast and move around to cover in marinade. (You could actually freeze it at this point for another time. Just make sure to label and date.)
- Place bag in large bowl, in case of leakage, and place in refrigerator. Marinate for at least one hour or up to 10 hours.
- Remove chicken from refrigerator about 30 minutes before cooking to come to room temperature.
- Heat 1 tablespoon olive oil and 1 tablespoon avocado oil in a cast iron skillet over medium-high heat.
- When oil is hot place half of the chicken in pan and sprinkle with sea salt and freshly ground black pepper.
- Cook on the first side for about 5 minutes. Turn over and cook second side for about 3 to 4 minutes or until chicken is cooked through.
- Place on plate and keep warm while cooking rest of chicken.
- Repeat steps 7, 8 and 9 for the other half of chicken
- Serve with quinoa and a green salad for a complete meal. Enjoy!
