I love making one-pan dishes, casseroles and crock-pot meals and this recipe for Ground Turkey Black Bean Skillet is quick and easy to make.
One-pan dishes, casseroles or crock-pot meals make getting dinner on the table after working all day so much easier. Add a side salad and you are set to eat, no stress needed.
Loaded with lean protein, vegetables and fiber to keep you full and healthy. And the left-overs tomorrow taste even better is that’s possible. Makes a great lunch the next day.
Originally inspired by JJ Virgin’s recipe “Ground Beef, Black Beans and Mushroom Skillet”, it also reminded me of a recipe from my aunt that I loved. I changed it up by using ground turkey instead of beef, adding fresh garlic, carrots and celery, peas and thickening the sauce with arrowroot powder, combining the best of both recipes.
This is really good by itself or over cooked quinoa or brown rice for more fiber.
