One of my favorite dishes is enchiladas, but I don’t care for the time or mess to make them. This casserole is quick and easy to put together, and no mess rolling the tortillas. Look for organic corn tortillas to avoid GMO corn. Or make your own homemade ones.
Grass-Fed Beef – Rich in B vitamins especially Vitamin B-12. Also iron, Vitamin D, zinc, magnesium, copper, cobalt, phosphorus, chromium, nickel, and selenium. A good source of protein and omega-3 fatty acids.
Onions – the phytochemicals and Vitamin support your immune system, contains chromium to help stabilize blood sugar, and they are a scavenger of free radicals. Also contains Vitamin B-6 and manganese and small amounts of calcium, iron, folate, magnesium, phosphorus and potassium.
Monterey Jack Cheese – Contains calcium, protein, phosphorus, zinc and vitamin A. It is a low sodium cheese. Suitable for lactose intolerance. Pairs well with fruit and vegetables.
Smoked Paprika – Contains Vitamins A, E, and B-6. Also iron and Capsaicin. It is also believed that capsaicin helps to relax blood vessels which results in lowering blood pressure.
