I love making this over night and having it ready to go for breakfast on Monday morning. It makes approximately 5 servings. Since I am single I put it in a container and keep it in the refrigerator so I have ready made breakfast for the week.
I got the inspiration for this recipe for BBQ-Ranch Chicken Casserole from a blog post by Wendy Polisi. The original recipe used packaged flavored broccoli and packaged spiced chicken. Since I try to stay away from pre-packaged process foods as much as possible I worked this recipe up to imitate what I thought the flavor would be. Continue reading
