I ran across a version of this Smashed Chickpea Avocado Salad from Monique on AmbitiousKitchen.com. I adapted it by adding minced bell pepper and minced onion along with garlic powder and onion powder.
It is so delicious and versatile. It can be served as a salad on a bed of mixed greens, in a lettuce wrap. Also, as a sandwich or even as a dip with raw veggies. Or you can be like me and just eat it straight from the bowl. Like I said this is delicious.
Full of protein from the chickpeas and also healthy fats from the avocado. The creaminess of the avocado replaces the need for mayonnaise.

Avocado – high in omega 3 fatty acids which may help to improve heart health and lower cholesterol. They are also high in fiber and other essential vitamins and minerals.
Chickpeas – High in protein and fiber to help control hunger and blood sugar level. Contains exceptional levels of potassium, iron, vitamin B-6, manganese, folate acid and magnesium.
